    • 1 cup ragi
    • 4 ripened bananas
    • A pinch of salt
    • 3 tablespoons milk for the waffle batter

    Method

    1. Blend the ripened bananas and ragi into a smooth paste.
    2. Add the salt.
    3. Add milk a tablespoon at a time until the batter reaches your preferred waffle consistency.
    4. Pour the batter into a preheated waffle iron and cook until golden and crisp.

    Mini Dosas

Use the same batter. Replace the milk with water and adjust the consistency until it spreads thinly. Cook small dosas on a hot pan and serve plain or with honey.

    Tips From the Kitchen

    • Ripe bananas bring the sweetness, so the batter needs no added sugar.
    • Thick batter makes fluffier waffles. Thin batter makes crisper dosas.
