    A spiced cauliflower filling at the heart of it — fried, baked, or made sweet. Your kitchen, your choice

    These little parcels are street-food soul wrapped in the simplest of shells. The signature filling is fragrant cauliflower with ginger, garlic, and warm spice — but the recipe gives you two bonus fillings: one sweet, one verdant and savory. Serve them fresh, hot, and unapologetically.THE SHELL

    Pocket Options

    Use store-bought wonton wrappers for a quick, crisp result, or make your own dough for something more rustic and satisfying. Either way, the filling is the star.

    Store-bought Wonton Wrappers

    Ready to go, thin, and reliably crispy when fried. Look for square wrappers in the refrigerated section. One pack (about 40 sheets) feeds 4–6 people generously.

    Homemade Dough

    Mix 2 cups plain flour, ½ tsp salt, and 6–8 tbsp water into a firm dough. Rest 20 minutes, then roll thin and cut into rounds or squares. Slightly thicker than wonton wrappers — more like a samosa shell.


    SIGNATURE FILLING

    Spiced Cauliflower

    Ingredients

    • 1 mediumcauliflower, broken into small florets, blanched
    • 1 largeonion, very finely diced
    • 2 tbspneutral oil (sunflower or vegetable)
    • 3 tbspfresh ginger-garlic paste
    • 1 tspred chilli powder
    • 1 tbspgaram masala powder
    • To tastesalt
    • Optionalhandful of fresh coriander, chopped

    Blanch the cauliflower. Drop the florets into boiling salted water for 2 minutes. Drain and grate or finely chop them — you want a rough, chunky texture, not a purée.

    Sweat the onion. Heat the oil in a wide pan over medium heat. Add the finely diced onion and cook, stirring often, until it turns pink and then catches a little golden colour at the edges — about 8–10 minutes. Low and slow is the move here.

    Add the cauliflower. Stir the grated blanched cauliflower into the pan. Sauté together for 5 minutes until the cauliflower is well coated and just beginning to colour.

    Build the aromatics. Add the ginger-garlic paste and stir constantly for 1 minute — it should smell deeply fragrant and lose its raw edge.

    Spice it up. Sprinkle in the chilli powder and garam masala. Stir everything together and cook for another 2–3 minutes until the spices are cooked through and the mixture is relatively dry. Season with salt, stir in coriander if using, and leave to cool completely before filling.


    ASSEMBLY

    Fill & Cook

    Place a wrapper on a clean surface. Spoon 1–1½ tsp of filling into the centre (don’t overfill). Dab water around the edges with a fingertip, then fold and press firmly to seal — triangle, half-moon, or square. Press the seam twice to be sure.

    To fry: Heat oil to 175°C (350°F) and fry in batches for 2–3 minutes, turning once, until golden and crisp. Drain on paper towels. Serve immediately.

    To bake: Brush pockets with oil or egg wash. Bake at 200°C (390°F) for 16–18 minutes, flipping halfway, until golden and crunchy.


    ALTERNATE FILLINGS

    Two More to Try

    Same pocket, completely different mood. Use these fillings with either the wonton wrappers or the homemade dough, and follow the same assembly and cooking method.

    SWEET

    Carrot & Condensed Milk

    • 2 cupscarrot, finely grated
    • 4 tbspsweetened condensed milk
    • 1 tbspghee or butter
    • ¼ tspcardamom powder
    • Pinchsalt

    Melt ghee in a pan. Add grated carrot and cook on medium, stirring, for 6–8 minutes until the moisture cooks off. Pour in the condensed milk and cardamom. Stir and cook for another 4–5 minutes until the mixture thickens and pulls away from the pan. Cool completely before filling. These are best baked, not fried — the sweet filling can burn quickly in hot oil.

    SAVORY

    Carrot, Cabbage & Peas

    • 1 cupcarrot, shredded
    • 1 cupcabbage, finely shredded
    • ½ cupfrozen peas, thawed
    • 1 tbspoil
    • 1 tspsoy sauce or fish sauce
    • ½ tspwhite pepper
    • To tastesalt

    Heat oil in a wok or pan on high heat. Add carrot and cabbage and stir-fry for 3–4 minutes until softened but still with a little bite. Add peas, soy sauce, white pepper, and salt. Toss for 1 more minute. Spread on a tray to cool — the filling must be completely dry and cool before filling the wrappers or the pockets will burst. Works beautifully fried or baked.
