    Broccoli Pulav

    A One-Pot, Kid-Approved Dinner Ready in 20 Minutes

    Ingredients

    • Ghee
    • Fennel seeds
    • Cloves
    • Cinnamon stick
    • Cashews (optional)
    • 1 cup broccoli, cut into florets
    • 1 cup capsicum, diced
    • ½ cup potatoes, diced
    • 1 tablespoon ginger-garlic paste
    • 1 cup basmati rice, washed and soaked
    • Salt, to taste

    Instructions

    1. Temper the spices. Heat ghee in a pressure cooker. Add fennel seeds, cloves, and cinnamon, and let them sizzle until fragrant. Add cashews at this stage if using.
    2. Sauté the vegetables. Add the broccoli, capsicum, and potatoes. Sauté until slightly cooked but still a little firm.
    3. Add ginger-garlic paste. Stir it in and sauté until the vegetables are well coated and the raw smell fades.
    4. Add the rice. Add the soaked and drained basmati rice, along with salt to taste. Mix gently so the rice doesn’t break.
    5. Pressure cook. Close the lid and cook for three whistles.
    6. Serve hot. Let the pressure release naturally, fluff the rice gently, and serve hot with raita or a curry of your choice — a kids’ favorite combo!

    Pair this pulav with cool cucumber raita for a balanced, comforting meal, or serve alongside a simple curry for extra protein. It also works well packed into lunchboxes .
