    Ingredients:

    • 1 cup rava (semolina/sooji)
    • 3 cups water
    • 2–3 tsp oil
    • 1 clove
    • 1 small piece cinnamon
    • ½ tsp fennel seeds
    • 1 onion, sliced
    • 2–3 garlic cloves, finely chopped
    • 1 tomato, chopped
    • Veggies of your choice (peas, carrot, potatoes recommended)
    • 2–3 pinches turmeric
    • 1 tbsp chili powder (adjust to taste)
    • Salt to taste
    • 1–2 tsp ghee (optional)

    Instructions:

    1. Heat oil in a pan. Add fennel seeds, clove, and cinnamon piece. Let them sizzle.
    2. Add sliced onion and sauté until soft and translucent.
    3. Add chopped garlic and sauté until fragrant.
    4. Toss in tomatoes and cook until they soften.
    5. Add your veggies, turmeric, and chili powder. Sauté until veggies are about 80% cooked.
    6. Pour in 3 cups water per 1 cup rava, add salt, and bring to a boil.
    7. Slowly add rava while stirring constantly to avoid lumps.
    8. Cook on low heat, stirring until water is absorbed and upma stops sticking to the pan.
    9. Finish with a spoonful of ghee for extra flavor.
    10. Serve hot with chutney, sambar, or just enjoy with a cup of coffee.
