A simple, nutritious, and delicious twist on waffles – perfect for any time of the day!

    Ingredients:

1 cup ragi flour (finger millet)
1/2 cup boiled or grated vegetables (carrot, sweet potato, broccoli – or your favorites)
1/4 cup crumbled feta cheese (optional)
Water (as needed to adjust consistency)
    Salt to taste
    Instructions:

    Prepare the Veggies:
Boil chopped vegetables for 10 minutes or pressure cook for 3 whistles. Alternatively, grate them raw for more texture.

    Make the Batter:
In a mixing bowl, combine ragi flour, the vegetables, and salt. Add water gradually to make a thick, pourable batter (like regular waffle batter). Mix in feta if using.

    Cook the Waffle:
Preheat your waffle maker. Grease it lightly. Pour in the batter and cook until crispy and cooked through.

    Serve:
Enjoy hot with your favorite chutney, mint yogurt dip, or any savory sauce.
